Friday morning, for some mysterious reason, I found myself with time on my hands! I thought about what I could do with myself, and I decided that baking something would probably be the best use of that time. So I made SCONES, which, I've been told by real-life English people, are more like "rock biscuits," whatever the heck those are, than real "English" scones. Whatever. I like these.
2 C flour (today I went halvesies with white and whole wheat flour)
2 T sugar
1 T baking powder
1/2 t salt
Mix that all together, then cut in 6 T cold butter. Use a pastry blender if you have one.
Add 1/2 C mix-ins, like chocolate chips, dried fruit, etc. Today I used dates and toasted pecans.
Make a well, and pour in 3/4 C sour milk or buttermilke (you can make sour milk by adding some lemon juice to regular milk).
Mix very sparingly, with a very light hand. Turn it out onto counter and form it into a circle, like so:
Then cut it into 8 wedges:
And bake them for oh, about 15–20 minutes at 425 F. They will look and smell done.
These are best enjoyed with tea, on the front porch, with some accompaniments.
And if you are so fortunate as to have some homemade strawberry freezer jam on hand, by all means, use it!

MMmmm. I love baking scones. Have you ever made them with sweet potatoes or pumpkin? Delish.
(My scones are rock biscuits, too, but like them that way. I do like the English scones, too, but I think there is a conspiracy amongst everyone of British descent to keep their recipe and methods from Americans. Pay back for the Boston Tea party?)
